  1. First wash the chicken very well. put in a mixing bowl.add yogurt, 1 tsp ginger paste,1 tsp garlic paste,red chilli powder,2tbsp chopped mint and coriander leaves,add 1 tsp salt mix all together nicely. Cover and keep aside for half an hour.washed the rice and soaked in water for half an hour..
  2. Take a vessel add oil heat it add 3 onion slices and fry until they turn golden brown.transfer the half onion in a plate. meanwhile the onion will be fry take the tomatoes and 3 green chillies in a mixer jar and grind them to make a fine paste..
  3. Now in the same oil add cumin seeds,1 bay leaf,pepper corn,2 cloves,2cardamom,one cinnamon stick,mave and star anise.saute few seconds add one onion slices saute.when onion turns brown add marinated chicken saute for 4-5 minutes.then add remaining ginger garlic paste. Add 1/2 tsp salt or as taste. mix well.cook it on high flame for 5 minutes then add tomato chilli paste.add little water mix well. cover and cook on medium flame until chicken turn soft..

After 10 minutes chicken turn soft and release water remove the lid.cook it on high flame until the water has evaporated.when it release oil and become little dry add biryani masala mix well turn off the flame. Take a vessel add rice and add 8 cups water.add caraway seeds bay lead and remaining whole spices.add slit green chillies and 4 tsp salt.add one tsp oil cover and cook the rice when it cooked 80%turn off the flame and strain the rice..
  5. Take a big vessel put on low flame.apply one layer of chicken then add a layer of rice.spread some fried onion,coriander and mint leaves.then again spread the chicken layer and rice then add fried onion, coriander and mint leaves.repeat the same process third time..
  6. At the last layer done.take Orange food colour in a cup add little water mix well.add this colour on the top of rice.add lemon juice and kewra water.cover and cook it for 5 minutes.turn off the flame. Spicy and yummy Biryani has done..
