- {Get 2 Kg of Leg of mutton or Shoulder of Lamb.

- First pre heat the slow cooker. Then cut the mutton into 4 or 5 big chunks and brown in a thick pan. Make sure there is bit of fat on the meat. Without some fat it wont be nice..
- When the meat is nice and brown add chopped garlic onion tomato and pesto and bring to the boil.
- Put 4 or 5 sprigs of Rosemary into a pre heated slow cooker.
- Then pour the meat and liquid on top. This way the Rosemary infuses lots of flavour into the meat as it cooks..
- Cook on low for HOURS. I did mine for 6 hours but longer is OK too.
- At the end of the cooking time I had far too much liquid so I returned it to the pot and reduced the liquid on a high heat..
- I served with a potato & veg crush. You could do rice or roast spuds too if you want..
